This is a different version of the famous Manchow soup that comes with a garnish of fried noodles, in my version, I have used plain boiled noodles putting them in the soup and not on top of it, hope you guys like it!
INGREDIENTS:
Carrots: 2 small carrots finely chopped
Beans: 7-8, finely chopped
Onions: 1-2 small-sized onions, finely chopped
Cabbage: 1/4, finely chopped
Garlic: 4-5 cloves, finely chopped
Ginger: 1/2 inch, finely chopped
Spring onion( greens): for garnish
Noodles: 1 bowl
Soy sauce: 1 tbsp
Tomato ketchup: 1& 1/2 tbsp
Vinegar: 1 tbsp
Salt: to taste
Pepper: to taste
Red Chili powder: 1/2tsp
Oil: 2 tsp
cornflour: 2 tbsp
NOTE: YOU CAN USE MAGGI OR CHINGS NOODLES, IT WILL GIVE A GOOD TASTE TO THE DISH RATHER THAN NORMAL STRAIGHT NOODLES. USING WHEAT NOODLES CAN MAKE THIS DISH SUPER HEALTHY!
METHOD:
1. Boil the noodles with some salt and oil, keep it aside for cooling.
2. Heat a deep kadhai and add in the oil.
3. As it heats up, add the chopped garlic and ginger and saute well.
4. Next, add in the finely chopped onions and saute again, then add the carrots and beans.
5. After sauteing all the veggies for a few minutes, add salt, pepper, and red chili powder and saute again to remove the raw flavor of all the veggies.
6. Next, add 6 -7 cups of hot water or vegetable stock and let everything simmer.
7. Give the soup a good boil, add in all the sauces and check the seasoning, adjust if needed.
8. In a bowl, make a slurry using cornflour and water, and add it to the boiling soup.
9. Let everything boil for a minute or two, you will see your soup thickening, switch off the flame.
10. For garnishing, take a soup bowl, add in some boiled noodles and then pour your Manchow soup over it, garnish with some spring onion greens and a dash of pepper, enjoy!
