THIN CRUST VEGGIE PIZZA

PANEER CHILI PIZZA (WITHOUT CHEESE)

 MAKES 4 PIZZAS

INGREDIENTS:

For the pizza base: 

Refined flour: 2 cups

yeast: 2 tsp

sugar: 1 and 1/2 tsp

salt: 1 tsp

oil: 2 tbsp

For pizza sauce:

tomatoes: 3 no.s 

onion: 2 no.s(medium-sized)

ginger: 1 inch

Garlic: 8-9 cloves

chili flakes: to taste

mixed herbs: to taste

oil: 2 tbsp

tomato ketchup: 2 tbsp

For the cheese sauce:

butter: 2 tbsp

refined flour: 2 tbsp

milk: 1 cup

black pepper powder:

salt: to taste

cheese slices(optional) : 2 slices

For paneer  chili topping:

Paneer: 250gm

chili sauce: 1/2 tsp

tomatoes sauce: 1 tsp

soya sauce: 1/2 tsp

oil: 1 tbsp

salt: to taste

green chilies: 2 no.s

other toppings:

Capsicum: 1 (cut into slices)

Onion: 2 medium-sized (shelled)


METHODS:

For the pizza base:

1. take a large vessel, add warm water and dissolve 1 tsp of sugar. add yeast and cover and leave it to proof for about 10 min.

2. measure and sieve flour, add flour to the yeast mixture and mix gently with a spoon. start kneading the dough by adding little water at a time. keep the dough soft and do not over knead. at last, add 1 tbsp oil on top and cover it and keep it aside for 2 hours.

3. after 2 hours, the dough will appear to be double in size, punch the dough and knead it for 2-3 mins. make 5 balls out of the dough, tuck them in and cover them again for 15mins.

4. now, the dough is ready to be rolled and baked! do not forget to sprinkle enough flour on your counter to avoid sticking of dough.

For the cheese sauce/bechamel:

 Take a pan, add butter and let it melt a little, slowly add the sieved flour and whisk it with a wire whisk, let it cook for about 5 mins, or till the flour turns aromatic. Make sure to keep the flame low otherwise the flour can burn. once its done, add milk and keep whisking to avoid lumps. add 1/2 cup of water to loosen the consistency. finally add salt, pepper, chili flakes, and mixed herbs.

For the pizza sauce:

1. boil tomatoes, onions, ginger, and garlic together for 15 mins, cool them once done. grind into a fine puree.

2. take a pan, add oil and let it heat, add Kashmiri red chili powder for bright red color. quickly add the tomato puree and saute on medium flame. add salt and cover it to cook faster. keep stirring and covering till oil separate, it can take around 15 mins to do so. once done add chili flakes and mixed herbs.

For the paneer chili topping:

1. heat oil in a pan and add 1 tsp chopped garlic and slitted green chilies, let them crackle a bit, quickly add paneer cubes and saute them for a while. 

2. add red sauce, green chili sauce, soy sauce, salt, and pepper. toss the paneer for 1 min. keep aside.

Making the Pizza:

1. preheat the oven at 200 degrees Celcius. roll the dough into the pizza base, place it onto a pizza pan, and prick it with a fork.

2. brush some oil on the pizza base, put 1 tbsp of red sauce and 1 tsp of ketchup, spread evenly. similarly, add 1 tbsp of white sauce and spread evenly. start placing the toppings of your choice. add a little more of white sauce on top to add taste. once ready, sprinkle a pinch of mixed herbs on top.

3. place the pizza pan in the oven, at 200 degrees Celcius, and let it bake for 15 mins. slice and enjoy the pizza with a glass of chilled soft drink of your choice!


NOTE:

1. FOR A QUICK PIZZA SAUCE, YOU CAN JUST MIX 4 TBSP OF KETCHUP WITH 1 TBSP OF SCHEZWAN SAUCE, CHILI FLAKES, AND MIXED HERBS.

2. YOU CAN BAKE PIZZA BASES AND KEEP IT IN YOUR FRIDGE FOR 5 DAYS IN A ZIPLOCK BAG.
